Rehearsal!
Blog friends.
Today is the rehearsal for my sister’s wedding! Quickly followed by the rehearsal dinner! It’s being hosted by her fiancé’s parents at an Irish pub. LOVE!
I have to keep this short, b/c you can see, my To Do list is no-where near complete!
Breks was a bowl of ethical eating…
- Nature’s Path O’s
- Nature’s Path pumpkin flax granola
- skim milk (Stonyfield)
- raisins
- Equal Exchange pecans
- half a banana
Din last night was a GINORM salad followed by eleventy billion household chores and errand-running to get stuff for the sister’s wedding.
I just lost the pics somehow. But be creative. You know what a salad looks like.
- spinach
- green leaf lettuce
- carrot
- maters
- cukes
- onion
- fresh avocado
- goat cheese
- sprinkle of pecans
- 2 tiny organic free range chicken tenders
Ok. I gotta:
- pack
- shower
- get a mani/pedi
- pack the car with all our chit
- drive to the wedding venue
- be a matron of honor!!
The weather is perfect! It’s going to be a fabulous wedding!!

When You Marry A Pack Rat
Morning kids.
Now that Hubz and I are in the throes of figuring out how to pack up our chit for our big move to PA, we find ourselves needing to make decisions about Stuff. What gets thrown out? What gets kept? Etc.
My husband is MANY wonderful things. One of his lesser qualities is that he is a bit of a pack rat. Last night, for example, he urged me to sit down and go through a basket of my stuff. So I sit down on the floor, stifle a grumble, and start sorting through the Stuff.
What do I discover? It’s All His!!! It’s literally ALL his stuff minus 1 pack of my CDs.
He was not pleased to be found out…
Look. Hillary knows Hubz has been caught!

To his credit, he’s done an excellent job getting stuffed boxed up so far…
With much laughter (mostly at his expense) we made it through the task and successfully threw out at least half that junk. SEVERAL maps and tourist brochures escaped my clutches though.
Pack Rat.
Anyway. Food.
Din last night was klassic. Whole wheat pizza and salad.
- ww Boboli crust with sauce, asiago cheese, Applegate Farms roasted red pepper sausage, mushroom, carmelized onions
- spinach salad with drizzle of olive oil/vin dressing and goat cheese
- a small pour of whatever Sauvignon Blanc I had cooling in the fridge
Gym = 20 minutes ellipticalling + squats + leg press + quad extensions + inner thigh machine
I have SO much work to do to try to nicely wrap things up for transfer to my co-workers upon my departure next week. Tis a bit overwhelming.
I did take a bit of a lunch break though…
- leftover quinoa topped with half a chicken tender, fresh avocado, sprinkle of almonds
- leftover half baked tater with pepper
- carrot sticks
This lunch was WAY too heavy on, what felt like, starch. I should skipped the tater but I’m trying to empty out leftovers in our fridge.
So. We are at T-minus TWO DAYS until my sister’s wedding!!!!
*squeeeeeee*

Where Are Their Legs?
If it doesn’t stop raining soon, I’m going to become homicidal. Just throwing that out there. And the likely targets? New Jersey commuters. Impatient. Rude. Dangerous. Now that I’m moving, I can barely tolerate commuting with these whackadoos anymore. It will be so.much.better once back in PA with civilized (read slow) drivers.
Because I had fun actually chewing Breks yesterday, I decided to stick with it again today (alas, no smoothie).

Last night was jam packed with gym time, stir frying, watching SYTYCD and being totally judgemental, and pondering some of life’s larger questions….
Like. Hey. Where are my animal crackers’ legs?
As Forrest Gump would say, you ain’t got no legs.
And to make things even weirder, it totally creeped me out to eat these little cookies BECAUSE they were missing their cookie appendages.

Strange.
Last night segue.
Din = classic stir fry.
- veggie stir fry
- free range organic chicken tenders
- sprinkle of red pepper flakes and splash of extra lo sodium soy sauce
- over a bed of quinoa (instead of rice)
It felt great to gobble all these veggies!
Gym = 30 minutes of a blend of cardio + arm weights.
Lunch = a FUN different option!
- sweet tater
- laughing cow cheese
- avocado
- faux chicken patty
- sprinkle of sliced roasted almonds
- gala apple
- 1 piece of Hershey’s dark choco
I nuked the tater in my work microwave and smashed all that other mojo on top. This was SO good and what a fun way to spice up my regular boring lunches of wraps and sandwiches!!
Ok, my coworkers are talking baseball. Shoot me in the face.
*puts in ear buds and turns on ipod*

Ugh, I cannot wait for this barely-even-a-sport to be O-V-E-R!!!
Dinner Fail
Breks this morning was pumpkiny great! After major struggles to remove myself from beneath my warm comforter, I showered, got ready for work, and switched up things on the Breks front a bit!
- ww toast with TJs pumpkin butter
- maple faux sausage
- COFFEE
Great combo of flavors. And I actually thought to myself on the way out the door….”wow, that was fun to eat a real breakfast.”
Methinks it’s time to give the smoothies a rest, if that’s what I’m thinking after a simple breakfast of toast and a veggie sausage, lol!
So.
Holy dinner FAIL!
Total. Complete. Only edible with blankets of hot sauce. This has not happened to me in years. I was quite upset with my performance in the kitch. I expect all meals I make to be lovely creations full of comforting flavors that leave me totally content at the end of the effort.
*sigh*
In an attempt to rid our pantry and our freezer of some items, as we prepare to move, I made the following in the crockpot:
- meatless meatballs
- cream of mushroom soup
- packet of vegan brown gravy
- diced sweet potato
- diced green pepper and onion
We ate it over quinoa with a spinach salad on the side.

The whole kitten caboodle…
It sounds like it should have worked, right?
Wellllll…
This, friends, was not good. We scrunched up our noses and finished our plates, but only out of pure protest at the forever-late-o’clock and the notion of making a totally new dinner at that point.
A few animals crackers later in the evening improved my spirits.
In reverse order…
Gym with Hubz for 25 minutes. Short but fun.
Dog park with Hillary. Short but fun.
Work. Meeting with a contractor. Work.
LUNCH! Lunch was stellar, thank god.

This sam was delish! Nothing is a better sandwich topping that fresh avocado…I swear!

- Stonyfield Super Fruit yogurt with Nature’s Path O’s and Agave Granola mixed in
- plus a few TJs dried cherries and Equal Exchange roasted pecans
- COFFEE
I could drink by the liter. It’s becoming a problem.
Well. I don’t think it’s a problem, but, science says too much caffeine is bad for us.
