Fair Trade Coffee

Hello friends!

I’m here.  Currently fighting the flu though. 

My life has dictated that I cut back on blogging for a bit.  I simply don’t have time, lol!  Work is really really busy.  Home is busy.  I’m house hunting (wee!).  And I’ve got a slew of family birthdays coming up in March that I’m trying to plan for.  Never fear, all is well.  I’m just swamped.

But there’s always time for coffee, right!

ETHICAL EATING SPOTLIGHT (or Ethical Drinking!)

Green Mountain Coffee sent me a sample of their Fair Trade, Organic Rain Forest Blend coffee to sample once I contacted them in an effort to promote their ethical stance to coffee production.

Lastly, I wanted to mention that I met up with Lauren last Monday for coffee, and she is as sweet in person as she is on her blog!  I can’t wait to get together with her again.  And speaking of sweet, look at the goodies she brought me as a “welcome to PA” gift!

Ethical Eating

  • eggwhites with peppers
  • veggie sausage
  • Laughing Cow cheese
  • whole wheat english muffin
  • tin mug coffee

Last night I tuned in to the State of the Union address, and ordered up a cocktail from our bar.

  • pomegranate seltzer
  • chunks of mango
  • ice

A delightful cocktail.  Who needs the vodka?!

I also whipped up a healthified version of one of my favorite childhood snacks…Haystacks!  All you need are these ingredients…

Melt together 3/4 cup of butterscotch chips and 2 Tablespoons PB.  Stir in 2-3 cups of the cereal.

Mound into little “haystacks” and refrigerate til firm.

It’s THAT easy.  And if you limit yourself to one of these dudes, the cals and fat aren’t too bad.

Srsly.  Is there anything cuter than a doggy snuggled up with a man????

Ran to the gym, did 30 mins LEVEL 12 (hills) on the elliptical and ran home and did 120 crunches.  Plus 10mins of at-home dumbbells for my arms.  I expect to look like this pretty soon.

I’m spoiled this week, in terms of dinner prep.  Pretty much I got to stand around reading magazines while Hubz got things going…

**Disclaimer**

I don’t like pork (unless it’s bacon).  But Hubz does.  So when I saw these super lean (organic) pork cuts at the store, I nabbed them for him.  Good wife, right?

But he did a nice job on these, and I managed to grumble my way thru the meat b/c I knew I was low on iron/protein for the day.

  • lemon pepper organic pork tenderloin slice (notice it’s a deck of cards in size…the right portion!)
  • green beans with toasted sunflower seeds

The President is Giving the State of the Union Address Tonight

Newsflash, in case y’all weren’t paying attention.  ;)

I almost didn’t post my Breks pictures out of shame for eating the same thing AGAIN. 

BUT. 

A lot of food bloggers eat the same oatmeal every morning and post those pictures, so I figured y’all can suffer another day of my eggwhites, lol.

Yeh.  I know.  The same lobster mug.  Look.  I’m a tired woman in the mornings.  I’m lucky I even take pictures let alone remember to mix it up for your viewing pleasure.

Hm.  It seems I have a lot of attitude today.

Wonder what that’s about?

Anyone STOKED for the President’s State of the Union address tonight?  I am.  I was a huge Obama supporter and campaigned and stuff for him.  I still support him. 

What I DESPISE is our Congress, for the most part.  I wish we could turn it upside down, shake out all the riff raff and old useless politicians, and start fresh.  And if they don’t get off their ass and pass some legislation BESIDES this healthcare debacle, I’m going to seriously reevaluate my political leanings and future support of candidates. 

Last night I did a solid 30 at the gym…elliptical Level 11 (random intervals) while reading my book.  Makes the time FLY.

Question.  What goes best with a bowl of split pea soup?

  • split pea soup + egg noodles + 1 spicy black bean burger
  • bowl of steamed peas
  • toasted 8 grain bread
  • water to drink

This was good, although the pea soup came from a little packet.  I think I coulda made a bit better one myself.  Hubz downed it tho, so I consider it a success.  I really am blessed to have a husband who puts up with my eating lifestyle and actually ENJOYS most of what we eat.

Last night I did 40 minutes of Detox Yoga.  It was, um, interesting.  And by interesting, I mean totally gay.  I had a hard time taking it seriously.  I felt powerful and relaxed afterward, but all that detoxing must have unleashed some bad shit because I had a panic attack about 5 minutes after stopping my practice. 

Not my idea of Zen.

I embraced my other mantra…“thank god for pills.”

I was in the WORST mood after that yoga practice.  Christ.  Totally not what I was hoping to feel.  So Hubby cheered my up by [see above pictures and lyrics].

Dinner was carbs!
