Ethical Eating
Michael Pollan and Steve Ells, the founder and CEO of Chipotle, were both on Oprah yesterday, to discuss The Truth About Food and Eating with a Conscience.
Um. TOTALLY!!!!
Michael, Steve, Oprah…I’ve been blogging about Ethical Eating for a year now!
My blog services are available!
Contact info: esavearth [at] gmail dot com
Breks this a.m. Can you guess it??
- eggwhites with peppers
- veggie sausage
- Laughing Cow cheese
- whole wheat english muffin
- tin mug coffee
Last night I tuned in to the State of the Union address, and ordered up a cocktail from our bar.
- pomegranate seltzer
- chunks of mango
- ice
A delightful cocktail. Who needs the vodka?!
I also whipped up a healthified version of one of my favorite childhood snacks…Haystacks! All you need are these ingredients…
Melt together 3/4 cup of butterscotch chips and 2 Tablespoons PB. Stir in 2-3 cups of the cereal.
![]()
Mound into little “haystacks” and refrigerate til firm.
It’s THAT easy. And if you limit yourself to one of these dudes, the cals and fat aren’t too bad.
On my way to the gym I got sidetracked by this gorgeousness…
Srsly. Is there anything cuter than a doggy snuggled up with a man????
Ran to the gym, did 30 mins LEVEL 12 (hills) on the elliptical and ran home and did 120 crunches. Plus 10mins of at-home dumbbells for my arms. I expect to look like this pretty soon.

I’m spoiled this week, in terms of dinner prep. Pretty much I got to stand around reading magazines while Hubz got things going…
**Disclaimer**
I don’t like pork (unless it’s bacon). But Hubz does. So when I saw these super lean (organic) pork cuts at the store, I nabbed them for him. Good wife, right?
But he did a nice job on these, and I managed to grumble my way thru the meat b/c I knew I was low on iron/protein for the day.
- lemon pepper organic pork tenderloin slice (notice it’s a deck of cards in size…the right portion!)
- green beans with toasted sunflower seeds
- tiny baked tater
- water
Here she is again, desperate to be included. Beggar!
I have questions for my readers, especially ones who never post.
- Had you heard of Ethical Eating before reading my blog?
- Has Ethical Eating become important has it become in your life?
- What kinds of things would you want to see me include in future Ethical Eating posts?
Please. Comment. I need to know where y’all stand!
Ciao,
Erin

Rachel says:Yes, I had heard of Ethical Eating before your blog. I do my best but there are so many factors to think about, and always room to grow.
Future posts: ok, so I don’t eat meat. But my man does, so I must buy it. I live in Houston, Texas. People here seem to like their factory farmed meat, so I have trouble even finding ‘organic, cage free, kosher, or halal’. If I do find them, they are usually not lean cuts. Maybe a meat shopping guide? Which of the buzzwords is best? Say I’m on a desert island in a grocery store and I have to choose between grocery store meats, which labels actually make any difference, and which are total BS? I know you have provided ‘which fish to buy, which meat to buy’ guides before, I’m going to look thru the archives again and see what I can find so you don’t have to repeat yourself

brandi says:the haystacks sound great! I need to try them.
I’m so sad I missed that Oprah - but I work at that time and we’re in the stone age and don’t have a DVR
I had heard about ethical eating before reading your blog, but I’ve learned so much more! I carry that fish card around in my wallet, and am a big supporter of local foods + sustainable options.
I’m up for anything you want to post - I think it’s an important topic that more people are interested in now, which is awesome.

Christine says:Hi Erin,
Yes, I was aware of the concept of Ethical Eating before reading your blog. I think one of my first interactions with the concept was reading Animal, Vegetable, Miracle (though not expressely about EE it did highlight the whole you can eat animals that haven’t been grown for processed products concept for me) However, I think that since reading your blog routinely I tend to be more aware of the concept and make a better attempt to incorporate it into my life.
I like the posts where you talk about how to make it more accessible and talk about articles, etc. that provide more information. I wish I could feel as passionately about it as you do but things like the farm show don’t make me angry, just more sad that that is a reality in our world. What I find useful is ways for me to avoid that - for example, discussing certain brands and why or why they aren’t as “good” as they purport to be (eg: Horizon Organic).
Also, and its your blog obvi you can do as you please haha but the whole recent cursing thing just makes me roll my eyes and not read. My attitude is I have a mouth like a sailor but if sometime take the time to type it they’re just begging for attention. If you really want to get your (very important) message out then just consider your audience. Again though just my (fairly non important) opinion
Keep up the good work! Sorry this is so long!

Karin says:Oh yeah sign me up for that too! I’d love to fly over there and chat with Oprah about food. Would be fun.
So yeah this is also why I’m not sure what you should include in future posts because I don’t know much about what you wrote about in the past.
Yes I’ve heard of Ethical eating before reading your blog.. Well because I started reading it.. TODAY?!?!
Ethical eating is super important to me (even though I sometimes also treat myself to some non-ethical food ;)). My boyfriend (the student) and I sometimes have huge discussions while shopping for groceries.

Katie says:Hey girl! I do the w “husband actually cooked so try not to grouch about the fact that it’s meat-heavy” thing. Lol
Animal, Vegetable, Miracle was also my first introduction to eating locally and thinking about what I eat and where it comes from. Shortly after I read Don’t Eat This Book which made me more aware of the concepts, especially when it comes to restaurants and humane meat. I started doing more research on my own. You and your blog have been my number 1 source of info after those books peaked my interest.
I don’t have anything specific I’d like to see. Just keep posting about EE! It keeps it in the forefront of my mind.

Cynthia (It All Changes) says:I saw that and thought Wow Erin must be on that show somewhere.
Had you heard of Ethical Eating before reading my blog? Only through talking to you otherwise. But you are the first to mention it to me.
Has Ethical Eating become important has it become in your life? I do eat more ethically now. My food is organic as much as my budget can handle. And we buy very few prepared things. And we shop at farmer’s markets when they are around. And our meat consumption is down to 2-3 times a week since we can’t really afford a lot of ethical meats. It’s worth the trade to me.
What kinds of things would you want to see me include in future Ethical Eating posts? I’d like to see some ideas on what to do if there are no farmer’s markets around in the winters. Ours is closed from mid-October until mid-April so I’d like to know better ways to help farmers than buy at the grocery.

Mama Pea says:I was thinking about haystacks the other day when I was making my colon blow bars.
I just love hearing your thought on all of the ethical eating issues. With all the vegan/vegetarian blogs out there, I like that you add the angle of ethical eating from a meat eater’s perspective…it helps me stay away from that PETA frame of mind, you know?
January 28th, 2010 at 1:10 PM
Natalie says:I am de-lurking to comment on this one. I had never heard the term ethical eating before but was familiar with the concept. My husband and I are trying to make the effort to eat this way and are slowly making progress. I love your blog and have been eating your “boring” breakfast every morning for the last 2 weeks!
January 28th, 2010 at 2:06 PM
coco says:actually I learned about EE through your blog… never thought about it before but it makes so much sense to me.
January 28th, 2010 at 2:17 PM
Kristin says:Yes, I had heard of Ethical Eating before reading your blog. However, I know much more about it now thanks to you.
We started getting organic soy milk and have even started buying organic eggs (they taste better!). A few steps at a time is what we’re leaning toward right now.
I always love a good recipe!

janetha b says:bah everyone is talking about that oprah episode which i totally missed. but yes, YOU should have been on oprah! you are the ethical eating guru
January 28th, 2010 at 5:23 PM
Michelle says:Those haystacks look yummo!
Holy crap. Can you imagine YOU on Oprah? She’d shit a brick.
Yep, I’ve known about ethical eating for a good few years now. I actually went vegetarian in 2005-2006. The thing is I like meat. I wish I didn’t because it would be much easier to just go veg! But the hubster and I, yep true omnivores.
However, we are both very opposed to the mass production of animals for human consumption. Thus, we strive to eat more ethically every day. It’s not always easy but we’re working on it.
I’d love to have even more focus and more of your opinion on ethical eating on your blog. The more we all put our thoughts out there the more we can all learn and move towards more humane and ethical practices in our daily lives.

Elizabeth says:I had heard about ethical eating before I started reading your blog.
Ethical eating has defnitely become an issue that I think more about now that I read your blog. It’s like one of those things that you start hearing and reading more about, so you start thinking more about it. I like that it’s now become one of the things I think about while I’m planning my meals for the week. Your blog has also encouraged me to eat more meatless meals, which is a new one for our household.
I really like the posts you do that have articles. I wish that you posted the source or magazine that it came from. (Like the tear-out above? It looks interesting, but what magazine is it?)
I always like things where I can feel a part of something. Maybe some kind of meatless Monday challenge for your readers? Or asking people to share their favorite meatless meals?
It’s obviously all up to you as to how you want your blog to evolve, but those are just a few of my suggestions/comments.
January 28th, 2010 at 6:03 PM
Amanda (Two Boos Who Eat) says:I’m still learning more about ethical eating so reading your blog will obviously help with that. I’m sad I missed that Oprah episode.
January 28th, 2010 at 6:52 PM
Marianne says:1. I need the vodka - but I’m Russian, so you know…it’s kinda like sour cream. Gotta have it.
2. Let’s say someone hates butterscotch - do you think chocolate chips would be an acceptable replacement in your haystacks?
3. Ethical eating has become more important to me (and I was aware before reading your blog). Alas, my situation has changed where I no longer control the grocery shopping, and have a difference of opinion with those who do. So I’m currently at odds with the whole thing. Doesn’t mean I don’t keep trying to influence those with the purchasing power around here - I’ve gotten organic yogurt to be a standard finally. Baby steps, right?
January 28th, 2010 at 7:58 PM
Lauren says:SO bummed I missed this Oprah! I hope its on Hulu!
I heard of Ethical Eating before, but it wasn’t enlightened for me until I started reading your blog. You have taken this concept to a whole nohter level. Keep doing just what your doing! Everyone appreciates it, trust me!

Jenny says:To be completely honest, I had not heard the term “ethical eating” before I found your blog…or maybe I had, but I didn’t care to know what it really meant. Thanks to bloggers like you, I really do put more thought into what I’m buying, and hopefully will continue to eat more and more “ethically” as time goes on
January 29th, 2010 at 10:15 AM
M. says:Hi
I still think we ALL have a long way to go regarding ethical eating (this term I have heard about for many years(you are joking right in thinking the majority of the world has not heard this term?)
for example in this post you are eating packaged lC cheese, veggie sausage, etc etc
For me ethical eating includes avoiding these overpackaged premade type foods ,drinking water from tap rather than packaged seltzers etc etc
My apologies -I think this is coming off as snarky and sarcastic, that was not my intention.I just meant to point out we all can do so much more and realize there are always many others to learn from as well as ourselves….
But kudos for joining our worldwide movement of ethical eating-welcome and bravo!

Lisa P says:Hi Erin,
Before reading your blog I knew of the concept of Ethical Eating but I heard the phrase from you. I also want to let you know that because of your blog I really rethought my way of eating meat and vegetables. I want to thank you for all the information that you provide on your blog. You really are making a difference!

Kara says:I had heard of ethical eating before reading your blog. I was very pleased to stumble upon it through KERF (I think that’s where anyway) - I have been reading many healthy living blogs like hers, but hadn’t found any geared towards ethical/clean eating that I really liked. So, bottom line here is that I’m hooked!
I have spent the past couple of years making changes in my eating habits much like your own, and am still contemplating whether or not to go veg. Ethical eating is very important to me and the more I commit to it, the better I feel overall.
I like the style of your blog. You’re honest and you talk about important issues as they come up (like the farm show), but still manage to add humor, which is always a plus! Keep it up!
January 29th, 2010 at 2:14 PM
Holly says:i missed that Oprah! and i am pissed about it! gah, i wonder if they will replay it?
i have heard of ethical eating in the past, but i think with the wonderful work of people like you, pollan and chipotle-man, it is coming to the forefront and into the mainstream. which is awesome.
ummm your haystacks?!?! GENIUS. i love them. i want like 10 of them right now.
have a fab weekend lady!
January 29th, 2010 at 11:41 PM
Andrea@WellnessNotes says:Yes, I think ethical eating is very important. And I love that you show that it can include animal products. I try to make very conscious choices about the food we eat (but I know I’m not “perfect.”) I think it is important to know where the food we eat comes from and to make informed decisions.

Christina says:Those haystacks look good!
I’ve heard about ethical eating before your blog but now most of the info I get on it is from here. I do have Michael Pollen’s book at home though, ready to read

lauren (athlEAT) says:Haystacks! I had completely forgotten about them. We always had them growing up. Now I am having a major craving.

Amber says:Hi Er!
I had heard of ethical eating before your blog and it is definitely something that I care about. I think the thing I’m most interested is how to eat ethically affordably (so that the hubby is more likely to go along with it!)
