El Diablo
Evening kids.

Din tonight was a twist on tacos. An open-faced twist.



- whole wheat wrap
- lean lean lean ground lean beef + 1/2 can black beans (I ate ~ 3/4 cup of the mix)
- seasoned with chili powda, cumin, salt, garlic
- AVOCADO
- low fat cheddar
- spinach and green leaf salad with sprouts, tomatoes, & lf peppercorn dressing
El Mexicano was broiled in the toaster oven for ~ 5 mins.
Plus, !El Hop Diablo (devil) IPA!

This was mucho fabuloso!
What was even better was that I totally practiced intuitive eating. I paid attention to what the food tasted like as I ate it. I ate slowly. I put my fork down every now and then to check for hunger signals vs. fullness signals. After I was done, I sat for 15 mins and watched tv, debating whether or not I was full. I even put some laundry in and putzed around a bit. Decided I wasn’t quite full, so I made another HALF portion of El Mexicano.
Now…I am done.

This is a BIG hurdle for me and I muy proud.
Question. What have you done today that makes you proud?!
Exercise today was a good one. 30 mins on the elliptical at Level 7 (1st time!). About 15mins of quad & hamstring work, and “pushes” for my triceps. Followed by 5 mins of stretching (my fav part).
Time to read blogs and finish my Diablo IPA!

Easter Egg Tree

Oh! I do I do!
Growing up in PA, it was completely normal to see these easter egg trees in people’s front yards. Completely. The more plastic eggs strung from string, THE BETTER!
I am not making fun, simply pointing out one of those little regional things that stirs your heart when you move away from home, and stumble across something like this. For me, today, that was easter eggs trees.
Are there easter egg trees where you live?!
The husband and I went to PA to help the sister & her fiance shop around for a rehearsal dinner venue for their upcoming Fall nuptials. About 25mins after crossing the Delaware River that separates NJ from PA, we spied our first easter egg tree!!! I was delighted.
On to today’s eats (which were substantially improved from yesterday if you could all be dears and just please ignore the beer).
Brekkie was an outstanding Oatmeal Pancake, courtesy of Kath over at Kath Eats Real Food! This was supa easy and even the husband said WOW while eating it. We topped it out with some banana and REAL Vermont Maple.




Once in PA, and after visiting the first of 3 rehearsal dinner options (which was WAY too stuffy for everyone’s taste), we had lunch at the at a fabulous place that houses, oh, about 100 beers.
*faints*
Here’s just a snippet…

I had one of THE BEST beers I’ve had the pleasure to sip. Green Flash IPA, a beer brewed in San Diego County, CA. Fantastic!

For Lunch I got the crabcake and corn sammy. It came with some kind of aioli, which I promptly scraped off. I also didn’t eat the bread, b/c it was soaked in butter. Just ruined the lovely crab. So I ate ~ 3/4 of the crab cake with the lettuce, and only about 10 of those chips. Please IGNORE the blurry finger my supa mature husband is using to flip off the camera in the background.


This place was definitely a great rehearsal dinner option!
From there, we moved on to this Irish Pub.


Oh, you can just scroll on past this carrot cake. It’s only my FAVORITE dessert evah. And I didn’t eat any of it, so just scroll on past.

I am Irish. I was in an Irish pub. The Irish are known for their ability to tell a yarn or two. Please bear that in mind.
So while I was ignoring this cake and chatting with this gem of a man (owner of the pub…the most delightful creature I’ve met in many years!!!), the husband was busy getting drunk on 18 year old whiskey the owner was kind enough to “educate” the husband with. Apparently, the whiskey the husband drinks at our local Irish pub (not this place) is true shit (imagine that’s said with an Irish brogue).
I didn’t want to leave this place, it was so joyful and fun! But the husband and I needed to get back home to walk the Hillary dog, so we grabbed coffee (nonfat hazelnut latte) and headed back to NJ (home of eggless easter trees).

Din tonight was a simple Amy’s veggie burger on whole grains with low fat American cheese, and a tossed spinach salad.

Stupid quad
*insert frowny face*
I’ve pulled my right quad. I am guessing I did it doing leg extensions or squats the other night. I haven’t hurt it this bad since a pull in college playing field hockey. Krap.
The husband says I should rest at least 2 days (no cardio). It was so weird going to the gym today and not getting on a cardio machine. I just did 30 mins of arm weights and crunches. I have an irrational fear of gaining weight if I don’t exercise with cardio at least 5 days per week. I realize this is ridiculous and a bad mindset.
Grr.
Anyone know any good tips for staying fit with a pulled quad?!
Din tonight was leftovers from earlier in the week, and just as good the 2nd time around!

On the white dinnerware….
- tomato-cheese soup with kidney beans, turkey, spinach, and green peppers (made in my crockpot)
- spinach salad with cranberries, almonds, & goat cheese (w/raspberry walnut dressing)
- toasted whole grains with buttah

This afternoon, I had the exact same yogurt and Larabar combo as yesterday.
Time to catch up on some blogs and wait for the husband to get home. Oh, and later tonight, I may or may not eat the frozen Reeses peanut butter egg hiding in my freezer.

Goat cheese makes everything better
Even gross ugly rainy cold days. That’s what today was.
Days like this make me crave warm blankets and comfort food. Trouble is, I was at a conference all day, and by the time dinner rolled around, I was craving veggies. Conference food is never quite diversified enough for a healthy eater’s preference.
‘course, after my Confession post last night, not too sure I can call myself a healthy eater (as I sit here sipping an IPA).
Dinner was a reheat combo of curry creamy veggie soup (and bread, of course) and the world’s biggest spinach salad topped with broccoli, carrot, tomato, almonds. And on that salad was goat cheese. Srsly, goat cheese is the best thing evah. And trust me, it does weird me out that I could love something so much, that is milked from a goat. But, I am a Capricorn, so really, it all makes sense.
My husband would be shaking his head with disgust at the mention of my zodiac sign. I’m a believer. He’s not. Mars…welcome to Venus.


Exercise rocked today. 30mins elliptical + 20mins circuit weight training. Plus I got to watch telly. Rocked.
The conference today was great. My presentation went fine and was well received. Of course the wretched weather outside made me a miserable & angry 30-year-old woman. Let’s just say, today I fit right in with the rest of New Jersey.

Lunch…


On the wasteful & disposable paper plate…
- ham sammy on croissant (I removed the other 2 slices of cheese)
- pickle
- 1 T of potato salad
- COOKIE!
- and then I was still hungry (pre-cookie), so I ate half of this…
All of it was fine. The turkey in whole wheat wrap was actually really good, and I’ll get it tomorrow as my whole lunch, if it’s available (Conference Part 2 tomorrow).

Brekkie was great today, and loaded with proteins. Veggie sausage, eggwhites with sauteed peppers, cheese on a whole wheat muffin. After eating it with an excellent cuppa coffee (& reading some o your blogs), I‘m off to present about BUGS and BUNNIES (eco speak).
