Sweeeeets

Morning kids.  Happy Easter to you Christians.

Today is FILLED with sweets already, and it’s only 11am.  I’m going to need to detox.

The morning started out with pastry from our Italian bakery.  I am almost embarassed to post what we got, but in the spirit of honesty…

 

Let’s just move on, shall we?

B.c I like a challenge, I decided to come up with a recipe for Marianne’s BSI - Coconut Recipe Challenge.  Based on stuff we had in the pantry (coconut thankfully), I whipped up something new.

Apricot & Fig Macaroon Balls (almost vegan)

  • 1.5 cups shredded coconut
  • half a banana
  • 2-3 Tablespoons of Greek apricots & figs (see below)

Put everything in a food processor, blend until creamy (not wet). 

Place rounded ball-like blobs onto a cookie sheet, bake at 325 for 15 mins.

 

These are sweet, in a natural apricoty kind of way.  Definitely clean tasting, and a delightful little treat after a meal.   They are somewhat delicate right out of the oven, so I’m refridgerating for 1 hour, now, to firm them up.

OK, cross your fingers I win the contest!

    I dont really celebrate Easter either but its always nice to eat some good food.. I hope you got a good dinner in! :)

    Lets detox together - I had a day filled with sweets too :-) But you need to do it every now and then. Otherwise, where is the fun in life?
