A Bright Day

Wednesday eats paled in comparison to the happiness I was feeling.  It was just a good day.  I’ve mentioned before that IWITW is dealing with some personal stuff.  Well.  Wednesday was a great day.  Just sunshine-y great.  So…yay.

  • creamy salsa bison + beans + peppers + onion + mushies + HOT sauce
  • brown rice
  • tossed spinach salad with cuke, carrot, maters, croutons, pecans in homemade garlic dijon
  • glass of cab sav

This was mucho delicioso!  We ate it and watched a DVR’d epi of Law and Order CI.  I really like the addition of Jeff Goldblum to this show!

Exercse.  I kickedass yesterday kids.  I did the easiest 30minute run ever.  I felt like I coulda kept going.  That’s never happened to me before!  Followed it up with 150+ different ab crunches.

Work is the same…busy busy trying to get a zillion documents reviewed before the end of the month.  At least it’s all eco-related and stuff this treehugger likes.

  • leftover broccoli in garlic sauce mixed with quinoa
  • watermelon
  • 1 piece of Dove dark chocolate
  • a beautifully ripe nectarine eaten 2 hours later.

For you Chinese food fans…try subbing quinoa for rice next time you get take-out.  Obvi make the quinoa at home (microwave…holla).  But it fills the same space and is SO much healthier than white rice.

And since my Breks pics get monotonous, I really shook things up yesterday with some snaps of the blender BEFORE the smoothie was poured into the cup.  I am a wild woman.

I Puffy Heart Leftovers

Yesterday’s eats were chock full of leftovers, and I couldn’t have been happier about it!

  1. It helps clean out the fridge (which is good for my anal Hubz who’s a bit of a nazi about fridge order)
  2. It’s an easy meal
  3. Lots of foods often taste better the next day!

Din last night was my leftover Chinese food, consisting of broccoli in garlic sauce over quinoa (my addition) instead of rice.  And Hubz and I split those last 2 steamed vegetable dumplings.  To drink I had a glass (or 2) of the Four Sisters suav blanc from the other night.  I think this meal was as good, or better than the night we ordered it!

To keep my and soul in shape, I did a 20 minute run on the treadmill followed by a circuit set of leg weights and ab work.  Only a 35 minute workout front to back.

Work is working me out and not in a good way.  The end.

Lunch was another set of yumtastic leftovers.

  • leftover korma curry with lentils, sweet potato, zukes, green beans, peppers, and a little bit of chicken
  • a side of doughy (love) farmers market bread

When I Was In China

Happy Saturday Bloggies!

Last night’s dinner took me back to the time I spent in China, back in 2004.  I had an amazing opportunity to travel there during grad school, to help teach a stream ecology course at one of their universities, up in the northern province of Harbin.  In that part of China, there’s a heavy Russian influence, and the foods are more bread and dough-based as opposed to rice-based in the central and southern provinces of the country.  In any case, I remember having these amazing steamed buns and dumplings that were super doughy and chewy, and filled with steaming vegetables and spices.

Well.  We tried a new Chinese restaurant in our town, and I ordered the vegetable dumplings on a whim, and BAM, I felt right back in Harbin!  They were AMAZING and I coulda just eaten them all for my meal.

Instead, I was a good girl and ate…

  • broccoli in garlic sauce (over quinoa instead of rice)

  • a handful of those amazing crunchy things with duck sauce

OMG was this an amazing dinner!  Good, real, Chinese food is hard to find, and this meal totally did it for me.

During our eats, Hubz and I watched Ghostbusters.  Talk about your classic 80s movie!

Exercise!  On a Friday, yours truly did a 20min run, 10 mins powerwalking, and 160 crunches/ab work.  That helped me justify the Chinese food for dinner, lol!

I’m a hot mess in this picture, no question.  But I wanted to show off the dress I ordered to wear to my sister’s wedding shower in 2 weeks.  Cute, right?

Lunch was g.g.g.g.r.r.r.r.eat!

I made a wrap that had smashed avocado as the 1st layer, topped with lettuce, then ham, then garlic hummus, then tomato, then spinach.  All wrapped up into that amazeballs beaut!  Plus…cherries on the slide.

Yeah.  So despite my 3 alarms, I managed to turn them all off and sleep in til 7:45am.  So.  That might be fine for all you college gals home on summer break, but this gal has a job that requires her to leave at 8:30am.  And I take quite a while to do all my morning prep stuff.  So, I was a super hot mess.  Ran to the shower, got dressed, ran out the door.  No breks or coffee…so thank goodness for the DD right by work!

Ok kids.  Hubz is off to visit his bro and parents, who are in town this weekend, all the way over from Pittsburgh.  They’re staying at his bro’s house tonight, and then up here with us tomorrow.  I’ve got the day to myself, but it’s already full of stuff I need to get done, ordered, purchased, etc for my sister’s shower.  I hope to squeeze in a movie if I can.  I adore my alone time, so I’m kinda excited to see where the day goes.
