I think, other than bread, bacon is my favorite food.  I could eat pounds of it.  Sick, but so delicious.

Hubz and I figured this meal cost about $3.50 to make.  Um.  TJs is SO fabulous.

What Do You Eat When You Fly?

LOL, sorry, I’m still riding my helicopter high from yesterday!

A quick recap of Tuesday’s eats since I’m supa ridic bizzy bee at work.

Din last night was yum in my tum.  A crockpot dish of beans and bison in a spicy creamy salsa sauce.  So good.  Nevermind the laptop side dish.  Bad blogger!

  • ground bison + black beans + cauliflower + peppers in a ff cream cheese and salsa sauce
  • wild rice
  • tossed spinach salad with homemade honey dijon dressing
  • water to drink

I really liked the wild rice as the base.  Hubz wasn’t too keen on it.

I did 20 minutes HARD ellipticalling and then 20 mins of arm work – curls, dips, walking pushups, chest flies, etc.

Plus a brisk walk with Hillary to get the muscles warmed up!

My coworker treated me to a lunch of sushi after our helicopter work!

  • about half of those way too delicious fried things

I’m a wasabi kook and use a TON.  When you eat sushi, are you straight up or with a wicked twist of fiery wasabi?

I had a bigger than normal Breks yesterday just in case I ended up getting air sick or naseous.  I wanted a good solid chunk of food to hold down the tummy fort up in that helo.  I was fine, so this musta done the trick.

  • half a fried egg with peppers and mushrooms
  • laughing cow garlic and herb cheese
  • whole grain panini toasted
  • HOT sauce
  • bowl of nectarine slices
  • coffee!

Ok, must finish out my busy bee day.  I have to leave work at 3pm in order to get to COURT in time.  Oh yeah.  Remember when I got hit last month?  Today I am supposed to testify for the State against the driver that hit me.  He’s contesting his citation for careless driving, and I’ve been summoned to testify.

This has undoubtedly been a crazy week for IWITW!

Sunday = Funday

 Good morning blog friends!

I’ve got an enormously busy day today and a super SUPER fun surprise I hope to get to share with you guys in the next few days.  It has to do with my work and it may or may not involve a helicopter!!

Sunday was a Funday in the IWITW (um, that’s the acronym for my blog name apparently) household.  Hubz and I bid my sista farewell and then got some cleaning and paperwork done.  Did a big grocery shop (but still stayed under $100) and then spent the afternoon with Hubz’ brother Darren.  And of course I didn’t snap any pics.  Stupid Erin.  I won’t get started on how much I hate Sunday nights, but the day was fun.

We did share some fun Sunday night brick oven pizza.  The boys ate pizza.  I ate a ginorm salad with a side of pizza.  I ate this, plus 1 more slice and was very content to stop there.  And a glass or 2 of a pleasant New Zealand sauvignon blanc.

There may have been some camera shy Ben and Jerry’s Coffee Heath bar  to round out the evening while we watched West Wing (thebestshowever) on DVD. 

I spent mucho of the afternoon reading your blogs and enjoying the weather.  So even if I didn’t comment, I promise I did read!

There may have been a solid 40mins where I could have been found at the pool, solo, with my book and the sunshine.     Pure alone time heaven!

I swear.  The teeniest smidge of butter on toasty whole grain bread is one of my absolute favorite things to eat.  Real butter makes all the difference.  And just a smidge is all I need.  Yumz.

I made egg sams for Breks for Hubz and Sis before she had to jet back to Philly.

OK, Erin has NO time to dilly dally…work demands my focus.

Up 3 lbs

LOL.  Guess I had that comin, after ALL the food I ate on my vacay.  I shoulda listened to y’all and not got on the scale.  But I was too curious.  So.  I shall be resuming regularly scheduled eating now.   Actually, starting yesterday.

Breakfast was a total rush job but a fun change of pace.  Dunkin Donuts makes those eggwhite flatbreads now, and they’re ~300cals.  I got the veggie one and I really like it, like, a lot a lot.  Please ignore the interior car shot…

Lunch was eaten while catching up on the piles of emails and work that had been waiting for me while I was gone.  A regular ham sam kicked up a notch with a slice of asiago cheese.  Totally a taste-able cheese for all you gals that forgo cheese b/c of lack of taste.  Berries and carrots rounded things out.

Din was a grab job from the freezer.  Leftover creamy salsa chicken and black beans on a few tortilla chips + a ginorm salad.  I def ate another equal sized portion of the chicken after cleaning off this plate.  So yum.  And for dessert I ate a camera shy chocolate ice milk bar.

Exercise.  Wellll….I’ve sprained the ankle pretty roughly.  And being a stubborn (stupid) lass, I figured I could still work out Thursday night.  I thought just 25mins on the stationary bike would be okay (followed by curls, extensions, abs).  Turns out…nope.  The ankle is pretty peeved at me right now.  It’s throbbing to the beat of it’s own rotten drum.  I guess it’s telling me to Stayyyyy Offff Ittt.

Does anyone else have trouble resting while injured?
