Why I was late to work
For some flipping reason, Blogger and Google readers are not listing my updated posts.

Woah! This is what I saw on the way to work today.

Getting closer

Um. Woah (again). I’ve, uh, never seen something this bad, so close, in real life.

It looked like a ginorm car fire, at least 1, maybe 2. I didn’t see any white tents set up, so I am hopeful the driver(s) survived.
Gosh!
A little shaken up, I decided to swing by the Health Shoppe for comfort food before hitting the office.

I was a good girl and just got a roll for lunch and these beauts.

Organic strawberries for $3.99. Seems pretty good to me. I’ve been grazing on them all day. I think I’m starting to sprout little yellow strawberry seeds.
I just got back from my after-lunch walk where I took a picture of Nature for you guys.

This is a woodpecker hole(s). Look how deep they go.

Quiz. Does anyone know why woodpeckers do this? I’ll post the answer in my next post!
Lunch was a bit heavy on the carby side, but I plan to run after work today, so I’ll burn some of that bizniz off.


- whole grain roll + Applegate Farms ham + American + lettuz

- Late July oranic vanilla creme cookies (de-lush!)
Before all the chaos this morning, I had a relatively calm morn at home, getting ready for work. Yes, again, I ate in the car, BUT I left home on time and was on track to get to work on time. Until I hit that accident. Oy.
Breks…


- mini whole wheat bagel + eggies + tempeh + veggies + hot sauce
- coffee
- a few strawberries here and there
Hey. I slept last night! I don’t want to jinx it tho, so I’m knocking on wood, throwing salt over my shoulder, spinning around 3 times, and crossing all crossables that it happens again tonight.
Maybe it was this little snacky poo that helped me out.

- 1 Weight Watchers toffee ice cream bar
- 1 crumbled heath coconut cookie
- drizzle (lots) of dark choco sauce
I’m making fajitas for dinner. Tell me your favorite fun addition to regular ole fajitas. I need inspiration!

Let’s talk a little bit more about the GIVEAWAY I’m hosting.
The hubz cracked open our 1st box of Dr. Kracker Culinary Crisps the other night.

Look at all those whole grain ingredients!

And we’ve both since sampled them. We tried the Cherry Semolina ones, and they are fun. Hubz looks like he’s puckering up, but honestly, he just chews funny. He’s weird.


A very interesting blend of tart cherry smidges, sesame, and semolina. These are both chewy and crisp. We both sampled them as is, but I would suggest trying with brie, goat cheese, chutney, or pear. Or just eat them plain, which is fun and tasty too. I really like these.

I cannot get over how generous Dr. Kracker is being with the prizes they are giving away.

It’s a gorgeous day here in NJ. How about where you are?
I forgot my coffee today and b/c I’m a complete nightmare without my morning caffeine, I stopped at Crackbucks and got a tall skinny hazelnut latte. What a flipping awesome morning treat. Too bad it costs about 100xs more than it should. Srsly. $3.32 for a small coffee. That cup of coffee costs about 25 cents to make. Quite a markup Starbucks.
And hey, Starbucks. If you’re reading this, start stocking organic fair trade coffee. B/c until you do, I’m not drinking your coffee anymore and will convince my readers not to as well.
Breks was fab, per usual.


On the cool plate…
- whole wheat mini bagel + fake veggie sausage + fried eggwhite + peppers/musrhooms/kale + HOT sauce + swiss cheese
- a small mug of COFFEE (not NEARLY enough for moi)

Help me choose
Hi kids.
Sitting here, doing some finances, waiting for the husband to get home from work. All very grown up boring stuff. Trying to decide if we should have crockpot chicken or whole wheat pizza & salad for dinner.
What’s your vote for my dinner?!
I’m feeling a ton better now. Whatever was in the tummy has vacated. And an hour nap on the couch helped too. Erin feels back on track.
Hey. Has anyone noticed it’s infinity degrees hot outside? Where the eff is Spring I ask you. Gosh dang, I am sick of asking this question. I’m ready to give up. Hope is a fragile thing, ya know.
Let’s talk about what I ate before falling asleep on the couch. Lunch was phenom today. The secret to yesterday’s curried salmon & pasta salad is to let it sit in the fridge for 24 hours. The flava was perfect today.





At the table…
- Curried salmon & pasta salad (to which I added walnuts and dried cherries, & sprinkle of sea salt)
- bed of spinach
- toasted Marathon whole grain bread
- strawberries
This was so tasty. I wanted more but in an effort to shed a few pounds (my new goal) I limited myself to the portion you see. I did eat 2 pieces of (unphoto’d) dark chocolate after lunch. Also excellent.
The morning was spent blogging, reading news, and catching up on emails. And resting. Breks was a beauts bowl of cereal! But I was sad to say hello to the bottom of the bag of my beloved Nature’s Path Maple Pecan Crunch.



At the table…
